Happy Halloween! Healthier Halloween Spooky Treats

Happy Halloween!!

Not going to lie but I'm really excited about today.  
My kids are old enough now to really get a kick out this 'holiday'
 and I just know the evening is going to be filled with goodies, 
treats and probably upset tummies!

Since we've already dipped into the Candy Stash enough as it is
 I decided I would fill the kids up with some healthier treats before heading out tonight.
I made these last year and the kids loved them.  Ok, my son may have looked at the Monster Apple Bites and the Carrot Fingers and ran off  but after he picked
 the yogurt drops and sunflower seeds off the Boo-Nanas he ate em all up! 

What you will need: 

Chocolate chips for eyes and mouth 
( I used yogurt drops and sun flower seeds)
Peanut Butter
Sliced Almonds


I used an apple slicer and put peanut butter to hold the yogurt drops in place for teeth.  
I also used yogurt drops for the eyes on the banana and added a little 
black icing just to finish off the eyes on the banana.  
Peanut Butter is also holding the sliced almonds in place as finger nails for the baby carrots. 

I also plan to make these mummy apples! 
So easy and I know my daughter will get a kick out of them. 

 Here is another great idea! 
Take a black sharpie or pen and get to doodling on those cuties!
SO adorable right?!

How about these Ninja Turtles? Cute right?

So easy to make and you can even look in the baking section at your local 
grocery store and find the little eyes to save you some time for those mummies. 
  I really do think the Ninja Turtles are way cuter!!

My how the times have changed.  
Two years ago we had a Halloween Birthday Party Theme  for my son's 1st Birthday and 
ALL the treats I made were the polar opposite of what you would see in my home today! 
I went all out on this day with candy, cookies and even Pinata's filled with junk! 

I was up all night making Frankenstein pops, 
labels for the cupcake making station, endless  amount of witch finger cookies, 
Rice Kristie treats shaped like ghosts and bats, and Oreo Cookie Mummies up the wazoo! 

There was candy for DAYS, and All of this AFTER HALLOWEEN. 
I'm sure all the parents were thanking me

I don't see a party quite like that in our near future that's for sure!
 But it sure did make for some great memories!!

Turkey Albondigas, 21 Day Fix Approved

This is a big family favorite.  I can't believe it's taken me this long to share it too.  
I make this almost every other week during the cold seasons.

You can use ground beef or turkey for this recipe.
I prefer to go with Turkey and load up on the veggies.
It's the one meal where no one is picky.
 I smash it all up in their bowl and I don't have single person
 picking out the veggies saying they don't like it.

For those of you on the 21 Day Fix your serving containers are perfect for this. 
Make your meat balls small enough to have 2 fit your red container
Here in my serving I have 1 Red, 1 Green.
You can also count the coconut oil as 1 tsp if you'd like but I didn't use much.
 Just the broth of the meat and veggies give it an excellent taste.
Like I said don't go crazy on the bouillon cubes or powder.
Totally not necessary :) 

This isn't the exact recipe that my mother gave me but it's it'll do.  
I know I have it saved somewhere and when I've looked up this recipe 
online there is a list of spices that I don't even know or much less already have in my pantry.
 I know expand my knowledge right...but I make due with what I

What you will need:

2-3lbs of Ground Turkey
3/4 cup diced on tomato
1/4 cup diced onions
*If you want to add a little spice dice up 1-2 serrano chilis
1 small garlic close finely diced
1 Egg
 1 pinch of rice, 1 tsp or so really :) 
Salt for a little taste
Chicken broth or bullion powder
1 garlic glove finely diced
I use celery, carrots, zucchini potatoes, chayote, go to town here people~

First I take a little bit of the dices up garlic, tomato and onion and with less than a tsp
of coconut oil I saute them a bit so when the albodigas are boiling I can add it to the pot later. 
I swear it gives it a better taste. I obviously do not use chili when I'm making some for the kids. 
But you an always make a smaller batch for the little ones :)

I chop up all my veggies while I bring a big pot of water to a boil. 
At the same time I have those chopped garlic, onions and tomato sauteing on a small skillet. 

I take EVERYTHING but the vegetables and throw it into a bowl to mix. 
The garlic, spices, onions, tomato, ground turkey, egg, and rice and mix it all up. 

YOU WILL GET DIRTY HERE! Mix well and make into meat balls.

When your water is to a boil I add all my veggies in except the squash 
( I wait a bit since it's gets too squishy)
 About 15 minutes later I throw in my meat balls.
 I add salt, and a bouillon powder to taste (I try not to use much, lots of sodium)
Let simmer for about 45 minutes longer.
I  swear the longer I leave it the better.
SO GOOD!! Even the next day!!

21 Day Fix Week 2 Update and Week 3 Meal Plan

We just wrapped up week 2 in our 21 Day Halloween Trim Down Challenge.  
And to be honest we had a couple of hiccups.  
Nothing bad, just life in general but the great thing about a support group like this is you can 
come in when you're ready and pick right where you left off. 
 I had a couple girls who were on vacation and still made healthy food choices, 
some have had some personal things come up 
but they are still showing up and powering through their workouts when they can.  
That makes me one proud COACH!! and even happier FRIEND! 

These challenge groups bring you together and together as a team we support, encourage and work together to stay on track, help find our way if we slip up and hold each other accountable to what we said we were going to bring to the really does take TEAM EFFORT!!  
For some it takes little while to feel comfortable and settle in as I like to call it.  
But for others, like me it was the game changer!
  It was place I could go without fear of judgement or criticism for  any of my missteps.  
 I still to this day check in with my own team page Accountability Group.  
Sometimes Coaches needed a little Coaching too ;)

 I got some great follow ups this week! 
I am holding steady at 158lbs and I am super happy about that.  
TRUST ME!! But it's time to step it up a notch this week.  
My food wasn't on point like I would have loved. 
Soda has crept it's ugly face back into my life and I need to nip it in the butt NOW!! 
Just like every tiny little effort in your workouts, each rep counts!! 
Well so does your food.  So if it's not on point you won't be either.  
In total 17lbs have been lost and that's only between 2 girls that reported their weight loss.  
I am still pushing of measurements and I expect them ladies!! 
Please I can not emphasis enough how important that if you are reading this...make sure you have those numbers!! ;)

 Not only are they losing weight but they are feeling and seeing the fruits of their labor.


  Here is my Week 3 Meal Plan that I shared with my Challengers over the weekend.
 I have my favorites as you can see.  
Why make things harder, the fresher and the easier it is to just grab and go the better for me.  

I shared my Lobster Cocktail Tostadas last week ,
and also promised my Albondigas Recipe but the week just got a way from me. 
 I will have it up tomorrow for Thursday.  

I also have one new recipe this week for a little breakfast change.  
It's and that's the Banana PB Chia Pudding I have there for Saturday morning.
  This will be my first time trying it so lets keep those fingers crossed! 

Trying to keep things interesting around here.  It's so easy to get stuck in bit of a rut and find yourself slipping back into old habits.  First it's one missed workout and then a few naughty meals and you find yourself back where you started.

Lobster Cocktail with Mini Won Ton Tostadas

Fresh Caught Lobster Anyone? Seriously pays to have a Diver in the family.  
Lobster Season just opened and my hubby brought home a great catch.  

Yes, I dive also but I have yet to attempt to catch these "BUGS" and they aren't easy to snatch up either especially at night.  I won't be attempting any of that quite yet.  
I love diving but obviously not enough to try and mess with  those guys.   

The one on the right was huge! 
Enough for leftovers the second day...I may of even had if for Dinner too ;)

I tried to keep the dish clean by  not using real fried tostadas.  
I was also out of corn tortillas ( yeah needed a grocery trip bad that ) 
So instead I used some won ton wrappers I had in the freezer.  
Took them out while I was chopping and boiling
 and just got them all toasty on the comal...(it's a tortilla skillet) 


1 Lobster (obviously you can use shrimp too)
1-2 Tomatoes depending on size
1/4  Onion
Cucumber (not pictured - I ran out)
1-3 Limes or Lemons
1 Avocado
Ketchup (Optional)
Tapatio Hot Sauce


1. I ripped the heads of the Lobster and cleaned out the poop shoot...yeah I totally just typed that.  Washed them up and threw in a pot of boiling water until I could see the meat turn that gorgeous coral/pinkish color.  My husband has been diving for years so I eyeball them now...mad skillz I also cut a up a little garlic and onion. ( I use that for everything!) 
NOTE: Try pink Himalayan Salt!

2.Chop up all your veggies! I was missing my beloved cucumber.  I used it all up with lemon and salt for snacks earlier in the week.  The Lobster catch was unplanned but I had to eat it fresh :) 

3.Ketchup is totally optional! You could make this like ceviche and not add it but I LOVE SHRIMP COCKTAILS so YES i used some Ketchup.  I barely used a 1/4 cup for the entire batch and there were more than 3 servings that I made out of it.  You can also use organic ketchup if your watching your sugar, gmo's and other added  I really try to stay away  as much as I can from all that garbage but I'm a flexible clean eater obviously. 
This is what it all looked like once I measured it all out into my 21 Day Fix Containers.  
Half the lobster fit in my red container and ALL the veggies I chopped fit in the Green.
 I did have to chop up more veggie but that's optional.

The LARGE Bowl I made had the following containers:

1 large lobster tail = 2 Red Containers
2 med-large tomatoes + 1/4 Onion (cucumbers options) = 2 Green Containers 
1/2 Med Avocado = 1 Blue (added it in fresh )
6 Won Ton Wrappers = 1 Yellow

My lunch serving was 1 Red, 1/2 Blue, 1/2 Green, 1 Yellow.

This was really YUMMY!! 
I encourage to give it a go even if it's just with shrimp.  
You can control what you put in it and how much.  
Trying to eyeball your containers at a restaurant just won't be the same.  
You can't control the seasoning or how fresh it really is.

21 Day Fix Week 1 Progress Update & Week 2 Meal Guide

Week 2 is off to a great start! The girls have checked in with me and while we currently have a total of 15lbs lost within the fist week between 5 challengers with only 4 checking in with their progress I think we are doing fantastic! Not everyone is doing the #21DayFix I also some girls continuing on with PiYo and others are just simply choosing to drink their Shakeolgoy along with an active lifestyle.  Whatever floats your boat and keeps you engaged ladies!! 

So week 1 is officially in the books! My girls did terrific! I'm so proud of them!
For me personally I had some fantastic results as well considering we celebrated my husband's 35th birthday with a couple of drinks and some family over for a BBQ over the weekend.
 But that's life remember, always something happening.
I stuck to my 21 Day Fix Containers as best as I could,
and made sure to follow my workouts along with my challengers.   

 I finally broke that ugly plateau and weighed in on Sunday Morning at 158lbs.  
Pretty jazzed about that myself but even better was having the 
girls check in with their progress as well! 

Stuff like this makes me so unbelievably happy!! Especially  Making it a family affair is the best way to not only stick to your goals but to get your family on board with it too.  What a great way to teach our little ones the importance of a healthy lifestyle. 

I have women from all ages, shapes and fitness levels in the group. 


Not everyone is going to find the workouts easy and that is totally ok, Like I said some girls have chosen to skip certain workouts and try other activities like hiking and bike riding.  I am ok with ALL of that.  What I'm not ok with is giving up on your dream.  You want it?  Then YOU need to Hustle and work for it! 

There is no magic secret here, you work hard, eat right and stay consistent and you will see results.  But you must also be willing to step out of your comfort zone.  While I'm proud of my challengers for sticking to their healthy choices I also encourage them to push past their comfort zone and even if the videos seem challenging and you look like a goof ball...WHO CARES!! you're in your own home for goodness  If you have to do every single move in that video as a modifier then DO IT!! That day will come when you can increase the weights and no longer have to be on your knees to do a push up, TRUST ME <3 

Here is the meal plan I shared with my group this week.  Keeping it real simple guys, why make it harder on yourself.  I stick to fresh fruits and veggies for snacking and the rest just seems to fall into place and when it doesn't I just try a little harder the next day.

21 Day Fix Round 2, Week 1 Meal Plan

Hello October!!!!I still can't believe it's Fall, although the current temperatures
that we've been having here in So Cal are not Fall like at all!!  It has been so HOT out here that we took advantage over the weekendand squeezed in a Family Beach Day.

The kids loved it and we got to take a little break from
the never ending madness that is Housework and Chores.    

I finished my week off strong with not just my workouts but my food choices.
 It's been a tough week I will tell you that.  With my PiYo classes being so late I drive passed fast food the whole way home and am just fighting the urge to stop and pick something up "real quick" but I have stayed real strong especially going into my second round of the 21 Day Fix.

Some things may change here and there because things do come up. 
 But for the most part this is what I have planned for myself.

  Meal prep for this week will be broken down into 2 nights.  Monday Morning and Wednesday Evening.  These are the days and times that work the best for me.  I love Sunday Meal Prep but find that it forces me to take time away from my Family.  So we spend the day resting, enjoying each others company and planning/scheduling events and things to do for the week ahead.

Tomorrow I will make the Ground Turkey Stuffed Bell Peppers, Chicken for my Salads and the Shredded Chicken I'll need for my Enchiladas.  I'll have that recipe to share NEXT WEEK! 

Tuesday is a new recipe I'm going to try and share with you.
I'm making shrimp scampi with veggie noodles.  I  bought a VEGGETTIE at Walmart and seriously CAN NOT WAIT to try it!!
