21 Day Halloween Trim Down Food & Fitness Challenge

The summer was ... well... tough when it comes to fitness and clean eating!! 
There were so many temptations.  Between Vacations, parties and just simple BBQ's with friends and family it was not easy making the most health conscious choices.

 I didn't lose any weight but I also didn't gain any so I'll still take it as a WIN for me.  
Plenty of non scale victories were still met but I really could not have done it without the basics I learned from the 21 Day Fix .

Open Faced Egg, Avocado and Bacon Sandwich

Last week I had some left over  bacon and I just couldn't let it go to waste, right? 
 I knew just what to do with it.  I threw an egg with some much needed #EggPorn and made the yummiest open faced  Sandwich.   I did add the top slice for my hubby to take on the go with him.  

What you will need: 

Bread, any kind ( I used Dave's Killer Bread, anything organic is my preference)
Bacon 1-2 cooked strips (mine was leftover)
Avocado (1-2 slices)
Egg (I love mine with a runny yolk!!)

Toast your bread, throw your egg on a skillet with olive oil, and just pile it on top and Enjoy!! 

This can be 21 Day Fix Approved.  
You can eliminate the bacon or use turkey bacon, 
sliced turkey or even some left over steak.  Int his case it would be:

1-Yellow (1 slice of bread)
1-2-Red (1 egg, depends on choice of protein)
1-Blue (depending on how much avocado you use 
If you use a non stick skillet you won't even have to use olive oil or butter ;)

5 Myths about Shakeology

How many of you think or have thought Shakeology is just a protein shake or even worse...JUST a weightless meal replacement...(raises hand) Then I encourage you to read this great post: 

I have been a Beacbody customer for years...10 to be exact.. I am not a gym girl, or into sports, I suck terribly...sorry! I loved dance but being overweight made me even more embarrassed to attend classes. So for me Beachbody was my solution THEN and NOW. #Turbogirlforlife but then I got married, had babies, and WOA! times had changed. Yes I tried to eat healthy, I gave up soda, sweets and fast food. Not completely but enough to know that I needed something MORE. I saw Shakeology while browsing around the site for a new fitness program. I, just like many took one look at the price and hit that big red X on the right hand corner of the screen...#Truestory But after MANY failed attempts at juicing, and trying my own concoctions to get all my days nutrients I figured it was worth taking the time to look into and I'm so glad I did! I tried it, for two months, and was hooked. Best decision ever! And as a coach I get it for $3 dollars a day. Regularly $4.40 a day. But that's your latte, or happy hour, or a quick grab and go. 

This is very, very doable and I realized how this was MY solution. 

The initial investment in myself has paid me back tenfold. Not just physically, but mentally and even financially. My life really did change the moment I decided to try Shakeology.  I encourage to take leap of faith, at $3.00-$4.00 per shake it's worth a shot!

Weekly Meal Plan, 7 Day Challenge

This Monday is the start of my  Happier and Healthier Me Challenge Group if you

I just finished creating my meal plan for the week and wanted to share. 

The E-book explains step by step on how to calculate your calorie needs and guess what,
 exactly what I'm supposed to shoot for according to most websites and my servings are similar to the the 21 Day Fix.  Guess there is no real magic here besides the obvious right ;)

This is the Meal Plan I created for myself for the coming week. 

I will make grilled chicken, plenty for myself and also lunch for my husband.  Because I am a stay at home mom I do make breakfast just about every morning but it takes me just a few minutes, while I brew our coffee and get myself organized for the day I whip up breakfast.  My hubby is super easy, he's a breakfast sandwich or burrito kinda guy so I never have any guess work really.  I throw veggies in those eggs and sometimes left over steak or chicken from dinner or my meal prep.  I pack his lunch too!  He takes his Shakeology to go along with a coffee and I pack him either a salad or sandwich.  I put all the toppings in a tiny container on the side to nothing gets soggy and throw in an apple, banana or whatever else I have ready.  I'll pre cook any more meat or quinoa.

I myself keep it simple for breakfast. Scrambled eggs with veggies or plain avocado, steel cut oats with fruit and maybe some honey, an open faced sandwiches.  Check out the Eats and Treats Tab for more goodies.  I keep the portions small because I do have my Shakeology daily.  On the days I teach class I tend to eat a little more in the morning to power me through the long day.  The biggest goal here is to really just avoid the processed food.
\Look at all the food, the color, the variety and still with room to spare.
I know it's easy to grab a quick meal on the go but with a little planning you can make it work for you and your family.

Meal Prep I encourage you take a look around on Pinterest, Google or even check out some of meal prep posts HERE.  I don't make fancy meals, I just keep it simple and yummy because if I don't, it usually leads to the drive thru for us...True Story!

3 Day Refresh Update

Okay so a couple weeks I posted on my Facebook that the Hubby and I were going to
start our 3 Day Refresh.  It was a little spontaneous because they arrived weeks ago and were just sitting there at my desk waiting for me and my hubby to decide to start it...So instead of  putting it off another week we just jumped on it and decided to give it ago.  Seemed simple enough, I read the program guide and very quickly realized where we would have the most difficulty.  We are meat eaters, we love our chicken, fish and steak.  But we figured with our crummy eating habits lately especially with our 5 year wedding anniversary that had passed we knew it was in our best interest to do it anyways.  Just 3 days right, what could go wrong?  

I've only done the Shakeology 3 day cleanse before but the 3 Day Refresh was created to give you more fiber and other essential nutrients your body needs while doing such a cleanse.  I found them to be very similar in how you plan your day. You have 3 shakes a day accompanied by healthy fresh whole food snacks like fruits, veggies and nuts.  The only big difference in the refresh is there is no meat...none...umm...We are carnivores and I will be very honest, by Day 2 I was feeling really unsatisfied with a bowl filled with veggies all day long.  Stir fry or plain it just wasn't enough to keep me focused.  Remember, this is a cleanse so YES sacrifices and will power should be on the top of you priority if you decide to try this.  But also understand that just because this wasn't my cup of tea doesn't mean that it can't be you.  Like I mentioned there are certain things to be expected with this's called a CLEANSE for a reasons. 

I thought the fiber and the vanilla refresh were doable, as in not a super nasty taste in your mouth.   I made it to day 2 but after my PiYo class on Day 3 I was done, I was hungry and borderline starving, I NEVER let myself get that hungry and I needed and wanted some more than what the refresh could offer me by staying to the guidelines.  Please understand that I am used to eating 1600-1700 give or take per day, I exercise vigorously and the calories I was consuming on the cleanse just were not enough to keep be fueled.  I was getting a little lightheaded after my classes and was very absent minded.  It doesn't change the fact that the program is filled with great meal tips and recipes. 

Would I do this cleanse again? ABSOLUTELY!! 
I lost 4lbs and almost 2 inches!!  I not only felt better, but that yucky BLOAT WAS GONE!!

I will definitely plan SMARTER and more accordingly next time.   Like I said, towards the end of the night on Day 2 is when I really felt like my body just needed more fuel for all the activity I put my body through those days.  I did not complete Day 3 as I had another class to prepare for and teach. 
 I am still super happy with my results! 

SO was this a total loss or waste of time? NOPE, not at all.  
It helped kick start me for the weeks to follow and I've been doing great since then.
 I've even lost another 2 lbs. since then, I Just weight  myself this morning.

So what about my husband who decided to the cleanse right along with me?
  Well he only made it to Day 2 also.  My husband is not a veggie matter what I've tried in the past, even adding bacon to asparagus he still won't eat 
 He does love his Vanilla Shakeology every morning with his breakfast though ;) 

 But as a scuba instructor and having a class on his 1st day of the refresh I could tell we getting hungry the evening.  I can only imagine how much his body was asking for more food the next morning, diving takes so much out of you.  Just like me on Day 2 he was starting to feel a little sick and light headed.  
With another class schedule for the the next day I didn't pressure him to finish 
Day 3 and made him his regular breakfast... I'm sure he was happy about that. 

 What's great about trying this together is my hubby and I have talked more about incorporating more Vegan meals and really making a bigger effort to avoid the fast food as much as possible.  We can be lazy too and hit up the Farmer Boys down the street, but we try a little harder now not to.  

Would I recommend this to anyone else? Yes, of course, I was totally satisfied with my results, I learned a few new things not just in the kitchen but about myself and my will power.  Would I do this often, probably not.  I'm trying to stay consistent with my eating and exercise and learn to work around vacations.  I took our anniversary as a free for all and paid for it with cravings, guilty feelings, and stressing myself out over the weight gain.  I do feel the refresh helped me get back on track and regain my focus on where I was a couple months ago. 

For me my real goal is to get through life, holidays, vacations just like any other day, continue to make time for my workouts and make sure I'm eating to fuel my body not satisfy a craving.  
Vacations, Kids, life in general can really throw you off track, it's realizing this and choosing to make better decisions in that moment, not on a Monday or the following Month. 

 I hope this review (or my ramblings) helped  you making a decision on whether to give the refresh a try.  I've seen some great results in our team, AMAZING at that and throughout the success stories on the TeamBeachbody site.  Do what you feel would work best for you.

Tasty Tuesday; Grilled Chicken Mexican Salad

 Yeah I know not a very creative title but I promise it won't disappoint ;) This is my favorite homemade salad, it's so good even my hubby loves it! It's just a healthier take on that deliciousness you can get from those yummy taco salads only no shell of course.  
This is also 21 Day fix approved.   

What you will need;

*Romaine Lettuce
*Grilled Chicken
*Bell Peppers
*Brown rice or Quinoa
*Homemade Green Salsa
*Black Beans (can or home made, not re fried)
*Greek Yogurt

Wash, cut and dice and throw it all into a bowl and VIOLA! 

That's it!! Because I'm a huge believer in Meal Prep I tend to have fish, steak & chicken already cooked and I always...ALWAYS have home made green salsa on hand.  Hello, I can't call myself a TRUE MEXICAN or a WIFEY if I don'   That's a staple in our house.  Now I know you might have a family recipe but mine is super easy too and it works when you're short on ingredients.  

 I take about a pot full of green tomatoes with about 4-5 serrano chilies and bring to a boil.  (Yes wash them first) Once tender, you'll know, they start to change color to a lighter green, you put it all in the blender with about 1/4-3/4 cup of chopped onions.  I use a little of the water in was boiled in,  the less water the more thicker it is.  If you have cilantro add it too, I throw in some salt, fresh chopped garlic, cumin and blend!  All of this is really to taste and just practice.  Not quite like my mom's but it'll do ;) 

NOTE: If it's your first time do about 1-2 chilies at a time when blending 
so you don't make it too spicy.   

For my grilled chicken and use about 1-2 tsp of olive oil for 3-4 chicken breast.  Remember meal prep, the salad only has 4oz serving  Simply cut into pieces and cook until done.
