Shrimp& Veggie Lettuce Wraps

I think I'm the only person out there who has yet to try those rice paper rolls.  I've heard they're delicious and have been told they're easy to make but I can not find those papers in the grocery store...yet!  We just moved so I'm still not very familiar with the area.  So as usual, I decided to improvise and skip the rice paper all together.  This was so good, it would have been 100% 21 Day Fix Approved if it wasn't for the store bought sweet chili sauce.  I found a recipe on Pinterest that you can try here but didn't have the vineger to make it.  Oh well, maybe next time.  They still came out great, and were satisfying and filling and will probably be one of my favorites once I nail down a cleaner recipe for that sweet chili sauce.



WHAT YOU WILL NEED:

1/2 Cucumber 
1/4 Avocado
1 Carrot or in my case hand full of baby carrots
4-6 Lettuce Leaves, any kind, I used Romaine
6-9 Shrimp
Sriracha Sauce



  1.  Peel and Slice your cucumber in to long this strips, do the same with your avocado.  I used a shredder for the carrots.  Way easier than trying to cut those or any carrots into thin slices for that matter. 
  2. My shrimp were frozen so I took them out early, let them thaw out and gave them a good wash and sliced in half. 
  3. Load up you Lettuce, you can double it up to make them fuller or use each wrap individually.  
  4. I put a little Sriracha sauce and viola- Delish! I paired it with some sweet chili sauce I had but I plan on using THIS recipe next time.  I'll follow up and let you know how it goes ;)

June Goals

Last week I shared with my challenge group my June Goals and asked them to do the same.  I know it sound kinda silly to some but in reality it's one of the reasons I and tons of others on our team have been able to stick with not just our "weight-loss journey" but we've been able to strengthen other areas of our personal life.  It's all about balance right? Family, Friends, time for YOU! Having your goals clearly laid out for you  gives you this added drive to push a little harder that day and resist temptation, or even the way you handle certain situations.  I've discovered that my relationship with my husband and family has THRIVED over the last few months since we have stopped stressing over the things we can not control and learn better methods of handling the not so good times.   I have my personal, fitness, and family goals all written down, some are private and meant for my eyes only ;) 


Saturday Morning Weight In in my challenge group and I'm personally down 4lbs.  Summer is here, or at least it already feels like it so the Summer Fun has begun and I slacked off a little after doing the 21DayFix. My weight fluctuates and depending on my food choices some days I think I even look pregnant I can get so bloated.  It's nothing a few days of clean eating and plenty of water won't fix and it showed! 



I'm back on my A-game and holding steady with these stats.  I'm good, in all still down 50lbs and forgot how many inches but I also know it's time to step it up a notch in the kitchen again.  I know what I'm capable of and it's time to knock out these last 20+ or so lbs I have left so stick around of updates! The biggest tip I give my challengers is that even though it may seem like an uphill battle, once you MAKE IT YOUR HABIT making healthier food choices even when you're out become much easier.  Temptation is everywhere, I know that and you know that.  This lifestyle isn't for everyone, you will stumble, you make bad choices even when you think you're doing good, but giving up is not an option, at least for me it isn't. 



There is always something happening, a party, an event, family get together...my point is that waiting around for the perfect time to get started is just never going to happen. Enjoy the good times and if you overindulged that exact moment you recognize that you did, accept it, let go and move forward in the right direction.  Don't ruin the day by just giving up.  Add an extra workout, make rest day and non rest day and get yourself prepared! Don't have time to cook, hello!! heat real food, no cooking necessary and grab one of these rotisserie chickens and BOOM! INSTANT MEAL with endless options! 


We had one of the busiest weeks yet and having my time crunched like that had me on my toes but I pulled it off.  Our friends put together an amazing Adult only bus trip fundraiser, where we got to booze it up and hit the casino and outlets for the day, ALL FOR A GOOD CAUSE OF COURSE!!  It helped buy new uniforms and equipment for their kids team so I'm pretty sure you can guess that indulged.  I am not a big drinker but boy was it nice having an afternoon with out the kiddos and enjoying a cold one...lol  I also snagged a new gym bag and shoes! I couldn't help myself.  My how the times have changed, LITERALLY!! Gym clothes and shoes are filing the heels and purse racks pretty quickly.  This is way better than rewarding myself with food like I have the BAD HABIT of doing.  


Summer is practically knocking on our door step and I had these high expectations of being able to rock a two piece...well err...not there yet but I'll tell you what, I'm closer than I was this time last year that's for sure! My body had changed in so many ways, not just the physical part but the strength I have, inside and out! I've stepped WAY OUT OF MY COMFORT ZONE by even sharing these moments, my thoughts, my struggles but it has been worth it, for every "Thank you" and encouraging message of support I have gotten, from the bottom of my heart THANK YOU <3. 



 This is more than skinny jeans and a bikini.  It's about loving yourself enough to care for yourself.  It's changed me, I've grown and I love the person I'm becoming, the wife and mom I imagined and not the mom I  thought would disappear into her own darkness.  There is nothing but light bow, it's not perfect, but we until you can learn to love yourself the other broken pieces in your life won't be able to repair themselves either.  Some days are harder than others, but it's your choice each and every day to determine what you will do with it.

Grilled Onion and Mushroom Burger

A couple weeks ago My husband and I went on a Dive in La Jolla, CA and had lunch and Hennessy's...' well long story short he had the most delicious and ridiculously tempting mushroom and avocado burger and fries. It has been on my mind since, no joke! So I decided to clean it up a little, I was originally going to make it with ground turkey but it is a burger and I know my hubby needed a little break from all my turkey meals lately..lol 


I made Mine with no bun and used 2 slices of Organic Bread for my hubby's.  I don't buy buns really because I find that they end up going to waste.  So one day I just started making our burgers with our regular bread...since I buy organic then it's like double score! 


What you will need:

  • Hamburger Patties, preferably ground beef or ground turkey so that you an make them the size you want.  I added a little bit of garlic and salt for seasoning.  If you follow me, I use "dash" and "sprinkle" A LOT! get used to it..I literally mean a dash and sprinkle ;) 
  • Coconut Oil or cooking spray
  • 4-5 Red Potatoes (depending on size)
  • Mushrooms
  • Onion
  • Veggies for topping
  • Garlic   

  1. You'll want to start by cutting up your potatoes first into little squares, I put tossed them with a about tbsp of coconut oil and added another tbsp to my glass cooking pan, I set the oven to 350 degrees and placed them in the oven.  Check on them every few minutes, don't worry if they get a little stuck, once they start to get a little crispy you can toss them a little better. 
  2. Burgers are now also cooking on low heat, I kept it simple and use a little garlic and coconut oil.  Let the garlic cook a little bit before placing my burger patties on the skillet.  
  3. Slice up some onions and in a skillet add some coconut oil and about 1/2 Tsp of chopped garlic.  Add the onions, stir on low/med for a minute and add the mushrooms.  Cook on low, and stir until the mushroom soften and onions get caramel texture.  
That's it!! If you time it all just right those potatoes will be ready on time!  You can top this however you'd like.  Enjoy! Oh and did I mention that this is also 21 Day Fix Approved!

Tasty Tuesday: Breakfast Veggie and Egg Scramble

Need another healthy breakfast Idea? Well here you go! I got inspired by the Veggie Fit Fare Skillet at Denny's...yeah I know right...lol  But since I'm shooting for the healthier side of things I know making this at home will still be way better for me that ordering off a menu somewhere.  Also my husband always picks the same thing there and I guarantee you there is no Veggie or Fit in the title of his meal. My breakfast from this morning was divine so thought I would share it for this #TastyTuesday I had it just like you see there, and my hubby requested his in a burrito only 86 the broccoli...lol.  I know the drill so I only put enough for me anyways.  You can make this anyway you like, and add as many veggies, maybe a sprinkle of shredded cheese or sliced avocado on top.  I've made this several ways to keep it tasty and interesting.  Since I'm still using the 21 day fix I made it fit my day of course.  This was 1.5 Red, 1 Green, 1 Yellow (give or take ;)



What you will need:

4-5 Eggs 
Bell peppers ( I had all 3 and used 1/4 of each)
Serrano chilis
Onion
Tomato 
Broccoli
Red Skin Potato (2 small) 
Coconut Oil (2 Tblsp)
*dash of garlic and salt


Cut up your red potatoes first so you can prep  your veggies while you cook the potatoes, & use about 1tbps of coconut oil with a little bit of garlic ( mine comes in a jar, 1/4 tsp) and start cooking your potatoes on a skillet. 

Once they're turning brown add all your veggies but save the tomato for last.  
Add your eggs and your chicken (I already had a roasted chicken I bought at Costco so I used that) and right before your eggs are just about ready throw in the tomatoes and you're all set.  You can add little salt to taste but I barely use any :)
