Lemon Baked Salmon

Lemon Baked Salmon 

What you will need:

(2) 4-6oz Salmon
1-2 Tsp Butter (optional)
Salt to taste
Fresh or ground Garlic
Sliced Onion
1 cup Quinoa
2 Lemons
 1 tsp of Thyme

  1. Spray a little Pam on your tray or in this case my foil for easy clean up! 
  2. Add about 1/2 tsp of butter and spread on top of the salmon
  3. Slice up your lemons and onions and place them on top, I took another lemon and squeezed all the lemon juice onto the salmon.  
  4. Sprinkle salt and thyme (about half a tsp) and place in oven set at 400 degrees for 25 minutes.

I made steamed vegetables and followed the basic cooking instructions on the box for my Quinoa.  I added some sliced onions while it boiled and about 1/2 tsp of salt and fresh diced garlic.  Once the water was almost all absorbed I stirred in 1 tsp of butter.  And of course some sriracha sauce to add the finishing touch!

Steak Fajita Roll Ups

Steak Fajita Roll Ups! 

What you will need:

Flank Steak, thinly sliced 
1 Lemon for marinade
1/2 tsp Garlic
1/2 tsp Salt ( a pinch)
Sliced Bell Peppers 
Sliced Onions

Step 1.  Cut up your steak into strips about 1-1.5 inches X 3inches, place in a bowl with a sprinkle of salt, lemon juice and garlic.  I use a whole lemon for the steak to marinate in. 

Step 2. Slice up your bell peppers and onions like you see below.

Step 3. Roll up those veggies with the meat and use a toothpick to secure those bad boys into place

Step 4. Spray your skillet with Pam and cook fajita rolls on low to medium heat.  I sprinkle a bit more lemon while they cook.  Rotate, flip whatever you need to do to cook evenly on all sides. and Enjoy.  You can pair them with rice and beans or a small side salad.

Cleaned up Nachos

Nachos anyone?  I don't think this picture does this plate of nachos justice.  I can't help myself with those filters ya know.  Super easy to make and satisfies that nacho craving with far less fat and calories!

What you will need to re-create this is:

Blue Corn Organic Tortilla Chips (you can use any kind really, better than the greasy fast food stuff)
Ground Turkey or Ground Beef, you can also use Chicken ( cook your meat to your liking)
Veggies of your choice: I used Avocado, tomato, onion, lettuce
1Tbsp of Greek  Yogurt
1/4 cup Lowfat Shredded Cheese
1 Tbsp of my Homemade Green Salsa or any Hot Sauce of your choice.  I'm also a Tapatio kind girl .  

No real steps here other than pile all those goodies on there and ENJOY!

Shakeology Cleanse Results

Last week on Monday I decided I needed a good cleanse to flush all the holiday goop out of my system. So glad I did, I lost 4.4lbs in 3 days and was feeling almost like the old me again.  You can read more about it HERE. But I "cheated" a little bit on New Years Eve with Dinner and Drinks at the Queen Mary that I felt it was best to re-do the 3day cleanse again this week. And the results are in!!

Another 4lbs gone:) I'm happy with this, not just the scale part but the fluffy, bloated feeling is gone and those little lines of definition on my stomach are still visible. I know I still have work to do but I know there are abs under there...trust me, I've been working on them all of 2013!  I am also fully aware that my weight could fluctuate over the next few days now that I'm back to eating more solid meals and only 1 serving of Shakeology as opposed to 3 a day and guess what, I'm ok with that too! It's not so much about the scale and the number on it but how I felt after weeks of minimal activity, and lots of junk food. Having things in moderation is great but I knew I was slipping into old habits again and in this case the scale did not lie.

In total I lost 7.9lbs from 12/30-1/9 but I'm going with 8..lol  I am back to my regular routine, my workouts are better, I'm not dragging through them anymore and am able to keep up with the instructors again like I used to.  I love me some Dan and Rach. I'm currently doing Les Mills Combat and that ain't easy stuff. (check out the link for a preview)

 Last week I was still feeling sluggish and drained even during the workouts during the beginning of the cleanse. I still wasn't back to "normal" until this 2nd round of the cleanse this week. I think it's because I really cleaned up my act for the remainder of the week and followed the plan to the best of my ability. I did add a 3rd snack for all 3 days. I felt I needed a little extra something to carry me over. The cleanse isn't about starving yourself but more of flushing out the bad and restoring it with food that will fuel your body. Here is a breakdown of the 3 days.  I've said this before, there are TONS of "health shakes" on the market but NONE will compare to Shakeology.  Don't believe me, look at the ingredients.  That's what matters!

Day 1 and 2
Breakfast: 1 scoop Chocolate Shakeology blended with 1 frozen banana, 1 cup ice, 1 cup water, squirt of all natural honey.
Snack: 1 cup Green Tea with tangerine.
Lunch: 1 scoop Vanilla Shakeology blended with 1 cup frozen pineapple, 1 cup ice, 1 cup water.
Snack: Handful of baby carrots, 1 cup of green tea.
Dinner: 5oz. Grilled Chicken salad with tomato, cucumber, bell pepper and instead of dressing I used homemade green salsa.
Snack: 1/2 scoop of vanilla Shakeology, 1/2 scoop chocolate Shakeology, 1 small frozen banana, 1 cup of ice, 1 cup water
Day 3.
Breakfast: 1 scoop Vanilla Shakeology blended with 1 cup frozen strawberries, 1 cup ice, 1 cup water.
Snack: Celery sticks with All Natural Peanut Butter, 1 cup green tea
Lunch: 4oz. Tilapia Fish with a side of steamed broccoli and baby carrots, I also added some sliced of avocado
Snack: Apple, 1 cup green tea
Dinner: 1 scoop Vanilla Shakeology blended with 1 frozen banana, 1 cup ice, 1 cup water, sprinkle of cinnamon
Snack: 1 scoop GreenBerry Shakeology, 1 sup frozen mixed fruit with mango, berries, 1 cup ice, 1 cup water.

Throughout the entire 3 days I never once felt like I was starving or depriving myself. I made sure to drink plenty of water and have it with each meal even after I drank my shakes. I notice that most of the time when I think I'm hungry I'm really just dehydrated. The only real challenge for me was around Dinner time making everyone else food I was tempted to make myself a plate also but I kept with  my salad and shakes like a good girl.  My 31st birthday is exactly 1 month and I have goals to meet so temptation is not an option!

Shakeology 3 Day Cleanse Results

I don't know about you but the entire month of December was Brutal for me. Between the Christmas Party's, Family Dinners, and Holiday madness my time management really sucked! I sacrificed my health & fitness goals for tamales, chocolate, and booze. And although I did my best to stay active I knew it was time to re commit and get back to the groove of things and not just because of the New Year. On Monday I started My Shakeology 3 day Cleanse. Not going to lie but I picked a really crappy day to start it but I didn't want to wait another day, I was feeling tired, bloated and in need of a clean fix!  It was the last day of our camping trip and the were getting ready to head home that day so I was having some HANGRY moments followed by a couple of headaches throughout the day.  I kept it basic and alternated my shaked between Chocolate and Vanilla and added ice, frozen bananas, water and cinnamon to my shakes.  I snacked on a bowl of fresh veggies, apples with peanut butter and had a plain old chicken salad for Dinner.  I also made sure to drink plenty of water and my green tea. On day two I was already feeling better, I skipped my afternoon shake in the rush of things.  I did make an exception for New Year's Eve and had 2 drinks and Dinner at the Queen Mary in Long Beach, CA where my Hubby had gotten us tickets for that night.  Honestly, it was way overpriced and I don't think we'll do it again.  We definately expected more for what we paid for out tickets.  The night was still great but only becuase I have the Greatest Husband Ever! We left shorlty after the fireworks and went home to our babies.

I woke up on New Years Day and continued my cleanse. I lost a total of 4.4lbs, not bad considering I let myself be a bit flexible for the New Years Eve festivities and only worked out two out of the 3 days of the cleanse. Over the Thanksgiving holiday I lost weight and finally hit 158 ( I was shooting for anything in the 150's) but of course with weeks of sheer madness I put on a over 12lbs.   I weighed in at 170.2 Monday morning and today the scale was 165.8 Not too shabby considering I didn't follow the "plan" for all the 3 days like I was supposed to.  I have decided I am going to redo the cleanse properly and follow it to the T next week on Monday so stay tuned!..I'll have a full review how each day went and Shakeology recipes up on the blog.  If you're interested you're more than welcome to join me. The cleanse is pretty basic, you have 3 shakes, 2 cups of green tea, 1-2 sides of fruit and a salad with lean protein for dinner.
